caviar

the origins of Iranian caviar are shrouded in mystery and have become entwined in the serpentine grasp of myth and legend. Today, Iranian caviar is the most desired, the harmonious blend of the finest gastronomic qualities.
With its 740km Caspian Sea coastline, Iran was  the largest caviar producer in the world. Beluga, Asetra (or Ossetra), Sevruga … those are the three types of Iranian caviar which today still delight the palates of connoisseurs and seduce the palates of neophytes.

A royal delicacy.
If Iranian caviar has been able to claim the title 'Best in the World', it is certainly because of the unique and exceptional natural environment in which it was gathered. Sturgeons have long been attracted by the quality of the water of the Caspian Sea on the Iranian coasts, with its 900m depths and its cleanliness.
If these grains of black gold are of an extremely rare quality, the reputation of the knowledge of the experts  exceeds the heights of Mount Damavand. They are today wooed and sought after throughout the world.
Beluga caviar was the favored delicacy of the Shahs of Persia and the Tsars of Russia respectively, Beluga has remained the ultimate in luxury, a culinary experience like no other on earth.
Three sorts of Iranian caviar.
The 3 main species, which produce the world-renowned gastronomic delights, swim on the Iranian coasts :
-    Beluga, as rare as it is precious, is viewed as the mildest caviar. Its fine-skinned eggs, with their light to dark-grey colourings, melt in the mouth and leave an exceptionally subtle taste.
-    The rarest and most expensive caviar is noted for its large light-gray pea-sized pearls with a buttery, creamy, nutty flavor and unique full-flavored after taste.

- Ossetra: grey-coloured, veering towards golden, Asetra caviar releases a light, delicate taste of hazelnut in the mouth.
The most popular caviar in the world, known for its rich, nutty, briny flavor and firm, juicy, deep brown to gold pearls. While still expensive, it is the most affordable high-end caviars on the market.

- Sevruga: also known as the starry sturgeon, its eggs are amber and grey-coloured, and marked out by its delicate sea-scented flavour which only a real caviar-lover can appreciate.
The most common and affordable caviar varietals, it is said to have the most intense and rich flavor. With small, clear pearls with pale-grey juicy insides that have a smooth, buttery flavor with a fresh, clean finish.

Caviar and health

caviar boasts an impressive nutritional profile.

A 1-ounce (28-gram) serving of caviar provides (1):

    Calories: 75
    Protein: 7 grams
    Fat: 5 grams
    Carbs: 1 gram
Vitamin B12: 236% of the Daily Value (DV)
    Selenium: 34% of the DV
    Iron: 19% of the DV
    Sodium: 18% of the DV

As you can see, just one serving packs more than double your daily vitamin B12 needs. Vitamin B12 is essential for the development and function of your nervous system, as well as the production of DNA and red blood cells (2).

A single serving of caviar also provides small amounts of calcium and vitamins A, D, and E (1).

Lastly, this delicacy is a great source of omega-3 fatty acids called eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA). Perhaps surprisingly, these fatty acids are behind most of its potential health benefits.

The 2015 Dietary Guidelines for Americans recommend that you get 250 mg of EPA and DHA each per day. Conveniently, a 1-ounce (28-gram) serving of caviar provides 800 mg of EPA and 1,080 mg of DHA, which more than covers the recommended amounts .
Maintaining a healthy mind is important throughout life. Promisingly, research suggests that EPA improves mood disorders and DHA maintains brain structure. Thus, the omega-3 fatty acids in caviar may promote brain and mental health .

Omega-3 fatty acids are key elements of brain cell membranes that help fight inflammation. Researchers have speculated that reducing inflammation in the brain can reduce mental health decline seen in Alzheimer’s disease .

Additionally, studies have found that people with depression often have lower levels of omega-3 fatty acids, suggesting that a lack of this nutrient may be a risk factor for depression.
